Yummy recipe!

Hello everyone. I know that I have been missing in action lately and hope to be back in bloggerville very soon. I am nearly finished with my Bachelor's in HRM and my dear hubby will be home in the blink of an eye. :) Here is a recipe that we had at our Bible Study a few weeks ago. It was a hit and I thought I would share it with all of you!
Apple Coffee Cake with Crumble topping and glaze

CAKE:
1 stick plus 2 tsp. butter
1 1/2 cups brown sugar
2 lg. eggs
2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 individual size raspberry yogurt
1 tsp. lemon juice
1 tsp. vanilla extract
2 cups peeled, cored, and chopped apples

CRUMBLE:
1/2 cup brown sugar
½ cup flour
½ tsp. cinnamon
4 Tbsp butter softened

GLAZE:
½ cup brown sugar
½ tsp. vanilla extract
2 Tbsp. water

Preheat oven to 350 degrees. Lightly grease and bake in 13 x 9 inch pan.
Cream together butter and sugar for cake. Beat until fluffy. Add the eggs one at a time being sure to stir after each addition. Add flour, baking soda, cinnamon, and salt. Next add the yogurt, lemon juice, and vanilla. Now, fold in apples and spread mixture into pre greased pan.
To make topping combine sugar, flour, cinnamon, butter and mix until it is coarse or crumbly. Sprinkle over cake and bake for 40 minutes. Remove and let cool for about 10 minutes. While cooling, make glaze by combining the sugar, vanilla, and water. Mix until smooth in consistency and drizzle over cake and let set to harden slightly. Great served warm or room temperature! J
